Lime Chicken Tacos - Slow Cooker Recipe

This is one of my most favorite recipes!  I'm a HUGE citrus fan, and the tanginess of the lime juice, mixed with the kick of the chili powder is an awesome combination!  Add your favorite salsa to the mix and you've got a dish that is packed with flavor!  

Summer is prime time to host a festive party, and these would be great served at a party! Each person could decide if they would like a hard taco, soft taco, or make a little plate of nachos. Have fresh tomatoes, shredded cheese and lettuce, sour cream and guacamole for your guests and some fresh slices of lime to squeeze on top. Serve with some spanish rice and some yummy refried beans on the side as well. Your guests will be thrilled with all of their options!

Not having a party?  Serve these tacos up to your family, with all the fixings THEY like!  They'll love you for it!

This recipe would serve a family of 4, so feel free to double or tripple it!

Lime Chicken Tacos

Ingredients:
1 lb. boneless skinless chicken breasts (or there about)
2 limes, juiced
1 Tbsp. Chili Powder
1 16 oz. jar Salsa of your choosing
1 cup frozen corn

Directions:
Place the chicken breasts in Slow Cooker.  Mix the juice of 2 limes and Chili Powder together.  Pour it over the chicken.  Place your corn on top and pour the jar of Salsa over the top of everything.  Cook it on LOW for 6-8 hours.
Remove and shred the chicken, then place it back in the Slow Cooker and mix it with the liquid.  

Serve in a taco shell or on nachos and with toppings of your liking.  Serve with Spanish Rice and/or refried beans on the side for a wonderful accompaniment.  Enjoy!

I have made this before and not only does it taste great but it is so easy and you typically have the ingredients on hand. I also throw in some cilantro, we love it!
