Impress Your Sweetheart with Valentine's Day Chex Mix

This sweet treat is easy to make and sure to impress your Valentine.

It's Valentine's Day. If you haven't bought a gift yet, or just want to make a special treat, you'll want to try this recipe for Valentine's Day Chex Mix.

I found the recipe on Pinterest, a great resource for food and gift ideas. The recipe takes only a few minutes to make, and you can package it up easily into a gift box to give to your sweetheart.

  • 9 c. Rice Chex cereal (gluten free)
  • 1 c. white vanilla baking chips
  • 1/2 c. peanut butter
  • 1/4 c. butter or margarine
  • 3/4 c. powdered sugar
  • 1/2 c. red, white and pink candy-coated chocolate candies
  • 1/4 c. red or pink sprinkles

To start, place the cereal in a large bowl. In small microwavable bowl, microwave baking chips, peanut butter and butter uncovered on high for one minute, to one minute 30 seconds, stirring every 30 seconds, until melted and smooth. Pour the peanut butter mixture over the cereal, stirring until evenly coated. Next, place half of the cereal mixture in 1-gallon resealable plastic bag. Add the powdered sugar, seal the bag and shake it until the cereal is well coated. Spread the cereal on waxed paper or foil to cool, about 15 minutes. Then, stir the candies and sprinkles in with the remaining cereal in the large bowl. Spread this mixture on waxed paper or foil to cool, about 15 minutes. After 15 minutes, combine both into a large serving dish, or gift boxes, and enjoy! You'll want to store leftovers in an airtight container. This recipe makes 22 servings.
